The second addition of the Pop Ups on Chester Street was the first time it was open to the public. This event was once again Chef Kelli’s home in Royal Oak, where three of Two Unique’s talented chefs paid homage to the pig. Chefs Rece, Michelle and Reid offered a Whole Hog Dinner featuring a mulefoot/manalista hog from Farm Field Table of Ferndale. The animal was prepared and celebrated in a true slow food tradition with small drink pairings. The beautiful produce was purchased from Geddes Farm in Birmingham. It’s August and in the height of peach season. Michigan has some of the best peaches so get them fresh and juicy while you can. Peaches are not just for dessert they can be savory too. With these recipes Chef Kelli has shown the versatility of the stone fruit. These are easy and entertain worthy dishes that use fresh local fruit at the peak of its season. August 4th is National Chocolate Chip Cookie Day. In honor of this sweet chocolaty glorious day here are a few baking tips from the Two Unique Pastry Team: Chef Tip#1: For a smooth and even batter, all ingredients to include butter and eggs should be room temperature. Chef Tip #2: To avoid lumpy batter, be sure to sift all dry ingredients. Chef Tip #3: After mixing, chill dough at least an hour before scooping to avoid a flat cookie. Chef Tip #4: Evenly space your cookies on the baking sheet for consistent baking.
